1 roasting chicken
500 mL yogurt
.5 tsp coriander, crushed
10 peppercorns, crushed
1 to 10 cloves garlic
pinch crushed cumin
3 sage leaves
1 bay leaf
.5 tsp celery seed
1 tbsp River Road Dark
Hot Chocolate
1.5 oz Sambuca

Mix ingredients and rub inside and outside of chicken.
Marinate 6–12 hours (in fridge, in a plastic bag works well).
Place chicken in roaster and cover with marinade. Roast.
Drippings make great gravy.
